The dish was first created by the French in the 14th century. It went by the name makarouns in several French cookbooks from that time.
The first modern version of the dish was written in a cookbook written in 1769 called “The Experienced French Housekeeper” written by Elizabeth Raffald.
Legend has it that pre-Presidency Thomas Jefferson fell in love with the dish while vising France and Italy.
In 1793, Jefferson had an ambassador purchase a machine to make macaroni on a trip to France. The machine didn’t suffice and he imported the ingredients instead.
In 1802, Jefferson served “macaroni pie” at a state dinner. Apparently everyone loved it because it has stayed a staple in the American cuisine since.
